The whole Grand Prix II line is fantastic. I bought this knife as well as the W?sthof Grand Prix II 8-Inch Cook's Knife and I am extremely satisfied. The first time I used them I was literally giddy. The vegetables I was slicing, cutting, and chopping didn't stand a chance. Like a hot knife through butter.
The knife is excellently balanced, and the handle won't slip out of your hand. The blade is extremely sharp. Seriously, be careful cleaning this thing -- I have already destroyed a few sponges, and got my fingers a couple times (I'm used to cleaning dull knives, what can I say?).
If you're looking for a great knife to last you a long time, you won't regret this purchase.

I bought this knife in addition to my block set, and I almost feel like I could've saved a ton of money and just bought this knife. I use it (and the 5" santoku) ALL the time. I use the rest of the knives in the set so rarely in comparison. I have small hands so I love all of the Wusthof Grand Prix II knives for both the handle size and shape and the weight and balance of the knives. I no longer believe that you need heavy knives for quality and performance. These knives defy that - they are great and do not weigh a lot which lessens the amount of muscle strain I get when I am chopping for an hour or more. I had a certain other brands' 4 star knives style, they were heavy, dulled easily, would rust if left in water for more than 30 minutes, made my arm and hand hurt like crazy, and they were just a lower caliber and quality compared to these - at least in my book. I've accidentally left these in the sink for over an hour, and they haven't rusted or become discoloured.
The santoku knife is the best all purpose blade to have, ever! It works well when cutting or chopping anything.

When I read to be careful about how sharp this knife is right out of the box, I was not prepared for it to be so true! Fortunately, the only thing I cut was food. But this knife is razor sharp out of the box. I love everything about this knife but my favorite feature is how food does not stick to the side of the knife. The scallops cut/ground into the side of the knife prevent thin slices of food (such as onions) from clinging to the side of the knife.
